Hi, I have been using my phone in the USA in the same way I use it in Canada but the data consumption is way too high, much higher than what I am used to spending.

Yes you can be right from the service agreement point 5.4
The amount of data used outside Quebec is rounded up to the next ten kilobytes for each use. For example, if you download 88 kilobytes of data outside Quebec, you will be billed for 90 kilobytes.
If your services are used through the network of a Fizz partner service provider, the data calculation rules may differ.

OK I understand, but I have a feeling everything is using more data. Even calls and sms seems to be data related and not provider related, am I right?
The calls should not affect the data if you do not use any voip app
The sms depends, long sms are using data, media sms (MMS) are using data too
